Sign up today for Helen Appel's class ... and others


 
Learn home food preservation techniques like freezing, drying and canning from local expert Helen Appel each Tuesday from 1-2 p.m. starting May 6 and running through May 27 at the Colfax Library. Helen has more than 60 years of experience preserving food. She began as a girl assisting her mom and became proficient during her 54 years of marriage to Dick Appel and while cooking for their family of 10 children, 30 grandchildren and 2 great-grandchildren. Helen estimates that she still cans more than 1000 jars of food per year thanks in large part to a family garden that is shared with their daughter Carolyn Kunkel. Helen also serves as a canning judge at the Latah County Fair each year.

Helen’s classes run for 4 weeks at a fee of $13 through Community Colleges of Spokane. Additional CCS classes set for spring include American Red Cross First Aid, Ukulele, Digital Photograph, Garden Mosaics, Watercolor and other forms of art. Classes are taught by local experts and college level instructors without tests or grades.
